In Kaduna, Nigeria, Adejoké Bakare (Joké) grew up surrounded by vibrant flavours and aromas. Her childhood was a delicious blend of her Yoruba mother’s and Igbo father’s culinary traditions. This diverse upbringing exposed her to a wide range of traditional Nigerian dishes, laying the foundation for her unique cooking style.

Joké’s love affair with food began at a young age, watching her maternal grandmother prepare traditional East Nigerian street food like dodo ikire (fried plantain). As the eldest child, cooking for her family was a joy, not a chore. These early experiences instilled in her a deep appreciation for the art of cooking and the importance of food in bringing people together.

Upon relocating to the UK in 1999, Joké pursued a degree in microbiology, driven by expectations rather than her true desires. However, her love for cooking persisted, and she continued to explore Nigerian cuisine, experimenting with new recipes and techniques, adapting them to her new surroundings and sharing them with friends.

The turning point came when Joké won the Brixton Kitchen competition in 2019. Joké’s ekuru dish wowed the crowd and she realized she wanted to share Nigerian cuisine globally. This led to the launch of her restaurant – Chishuru in 2020. The name, derived from the Hausa language, means “the silence that descends on the table when the food arrives,” reflecting Joké’s belief in the transformative power of food.

Chishuru’s menu showcases Joké’s innovative approach to West African cuisine, blending traditional flavors with modern twists.

Her years of dedication culminated in a historic milestone as Chishuru earned a Michelin star. This makes Joké the first Black female chef in the UK to receive this prestigious recognition. Tears of joy streamed down her face as she accepted the award, her heart overflowing with gratitude. She dedicated the award to all female chefs across the globe.

This achievement celebrated not only her culinary expertise but also Nigerian cuisine’s richness and diversity.

Joké’s journey showcases the power of embracing heritage and sharing love through food. Chishuru continues to thrive, with Joké remaining humble, knowing this recognition honors West African cuisine and her community.
